The restaurant Es Baluard emerges from a dream of passion for cooking. In 1994, Joan Torrens began his adventure in command of his own restaurant in Palma. He started in the kitchen of his mother, Antonia Cantallops, which gives him a firm foundation in his approach to traditional Mallorcan cuisine, while his constant focus on improvement and pursuit of excellence, marked his career.
His creations are praised by customers around the world, and especially by a devoted local clientele, which shows that through work, honesty and continuous innovation, the new Majorcan cuisine is an established reality, thanks to the effort and talent of chefs like him.
He is currently a favorite of the specialty food magazines and cooking shows in several foreign and national television and his work is reviewed by food critics worldwide as a benchmark of updated traditional cooking. He is considered a pioneer and one of the best examples of the new Majorcan cuisine.
